The Tie Guan Yin, roughly translated to Iron Goddess of Mercy, is a reference to Guanyin, the Chinese counterpoint to Avalokiteshvara the Boddhisattva of infinite compassion. The story relates to an old iron statue of Guanyin that a farmer in famine prayed to, the next day he found a tea bush growing at her feet, and from that bush came the Tie Guan Yin tea cultivar famous throughout China, Taiwan, and the world.
This Iron Goddess is made in the traditional way, meaning it is slowly withered, carefully oxidized, and lightly baked after it is finished, creating a smooth and thick tea that has notes of toasted nut and sweet vegetation in it. While this tea can be ubiquitous in the world-wide market, we are proud to have found a small organic farm and a dedicated tea maker to create this tea for us.
